Make-Ahead Breakfast Burritos
If you're like us, your typical morning is pretty chaotic. So breakfast is the LAST thing you have time for. Here is my solution:
These have been a life-saver for my husband and I! It takes a while to make, but next Sunday night after you put the kids to bed, throw on a good movie, crack open a beer or two (or a couple glasses of wine) and make your week easier!
Ingredients:
- Bell Peppers
- Onions
- 1 bag frozen hashbrowns
- 1 dozen eggs
- 1 bag tortillas
- butter/margarine
1. Prep work!
I chopped up 3 bell peppers and 1 yellow onion. I did NOT use all of this for the burritos, but froze the majority of it for use later in the week for various meals. I only used a handful for the burritos, and froze the rest in a freezer baggie.2. Cook ingredients!
Cook the bag of frozen hashbrowns , tossing in the handful of pepper/onion mix. When this is almost done (potatoes soft, edges brown) scramble dozen eggs in separate pan. When eggs are done, mix into pan with potato/pepper mixture.
3. Tortillas!
Heat butter/margarine in a medium skillet, and brown tortillas on both sides. Don't overcook, or they will be too crispy to roll into burritos!

4. Fill 'em & Roll 'em!
Place a large spoonful of filling mixture in the center of each tortilla. Splash with hot sauce if desired, and roll burrito style. (fold front over, both sides in, then roll closed.)5. Wrap 'em up!
Wrap two burritos in a square of foil as shown below. Repeat with all of the burritos, figuring on typically two burritos per person, per day.6. Bag 'um & Freeze 'um!
Place wrapped (and cooled!) burritos into gallon-sized freezer bags and toss them in the freezer. They are now ready to grab on your way out the door!**PLEASE don't forget that foil is NOT microwaveable! Please unwrap your burritos and place on a paper towel or a plate before re-heating!
